Costa Vida Sweet Pork Burritos

I made this last night and man is it good! I got all the recipe's from my sister-in-law's ward cookbook. The recipes are all really easy and inexpensive. Enjoy!

Costa Vida Sweet Pork
1 c. Pace salsa
1 c. brown sugar
1 T chili powder
1 T tabasco sauce
1 3-4 lb pork sirloin roast

Mix ingredients together and pour over pork roast. Cook in crockpot on low for 4-6 hours. Shred pork when cooked through.

Cilantro Lime Rice
1 c. uncooked rice
1 tsp. butter
1 tsp. lime zest
1 (15oz) can chicken broth
1 c. water
2 T lime juice
2 tsp. sugar
3 T fresh chopped cilantro

In a saucepan, combine rice, butter, lime zest, chicken broth and water. Bring to boil. Cover and cook 15-20 minutes, until rice is tender. Remove from heat. In a bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice.

Tomatillo Ranch Dressing
2 tomatillos, chopped
1 garlic clove, minced (I use garlic powder)
1/2 bunch cilantro
1/2 tsp. lime juice
1 jalapeno (no seeds)
1 bottle ranch dressing

Mix all ingredients in blender.

Serve with pinto or black beans. Use as a salad with tortilla pieces or serve in tortillas as burritos and dip in ranch.
